Cheesy pumpkin pasta bake

The sweetness of pumpkin meets the cheesiness of mac & cheese! An easy weeknight dinner

Cheesy pumpkin pasta bake (vegan and gluten free)

Easy comfort dish, perfect for a cold winter! Sweet, cheesy and easy to put together in 40 minutes tops.


Ingredients

  • 1 medium butternut pumpkin (you could use 1.5 cups premade or canned pumpkin puree)
  • 250-300 GF pasta, spiral, penne or macaroni
  • 1 cup of cashews (ideally soaked for a few hours, but you can use a fast soaking method if need be)
  • 1/2 cup unsweetened plant milk of your choice (I used almond)
  • 2 cloves of garlic
  • 1/3 cup of nutritional yeast
  • 1 teaspoon of onion powder
  • 1 teaspoon of salt + more to taste + pepper to taste
  • 1/4 cup gluten-free breadcrumbs
  • oil spray

Directions

  1. Wash and cut the pumpkin in small pieces. Place in a large pot and cover with water. Bring to the boil and cook until the pumpkin is soft and cooked through (about 15 -25 mins). When the pumpkin is soft, reduce to a puree. It should give you about 1 and 1/2 cups of pumpkin puree
  2. Preheat your oven to 200 degrees Celsius. In a large pot, bring water to a boil. Add your pasta and cook as per the packet instructions until just “al dente” you do not want to overcook the pasta.
  3. Once cooked drain the pasta and rinse under cold water to stop the cooking. Reserve.
  4. While the pasta is cooking… make the sauce. In a blender, place the pumpkin puree, cashews, the plant milk, 2 cloves of garlic, the nutritional yeast, the onion powder and one teaspoon of salt. Blend on high for 30 seconds. Taste and adjust with salt / pepper. (if you are extra naughty you can add vegan cheese in the sauce mix but this time around I didn’t. A pinch of turmeric can also make it more “yellow” if you prefer.
  5. In a large ovenproof dish, carefully mix the sauce and the pasta. (you can also mix in the pan or a bowl if you prefer). Sprinkle with gluten-free breadcrumbs and spray generously with oil. (This is optional, but it will help the bread crumbs to brown).
  6. Place in the oven for 15-20 minutes or until the top is brown. It’s ready!
