Do you miss waffles since on a gluten-free diet or being vegan? These are the solution
Vegan and gluten-free waffles

Vegan and Gluten-free waffles that don't taste like a pale healthified version, because they aren't. These are the closest to the real thing I've managed to make, and are really easy and fast to whip up.
Ingredients
- 1/2 cup of almond meal
- 1/2 cup of tapioca flour
- 1 tablespoon of coconut flour
- 1 teaspoon of baking powder (ensure GF)
- 2 teaspoons of sugar (optional, especially if making a savoury topping)
- replacer for 1 egg (I use orgran egg replacer 1 teaspoon powder + 2 teaspoons of water)*
- 2 tablespoons of coconut iol (or other oil if you do not like coconut)
- 1/2 teaspoon of apple cider vinegar
- 1/4 teaspoon if vanilla extract
- 1/2 cup almond milk (or other plant-based milk)
- a pinch of salt
Directions
- In a bowl, mix all the dry ingredients together. Add the egg replacer and the wet ingredients and mix well.
- Heat up your waffle iron. When it is hot, grease with coconut oil or another oil. Add 1/2 of the waffle mix and cook until a bit golden and fluffy. Try to not overcook, the exterior should be a bit crispy but the waffle and middle flexible and soft.
- Take out of the waffle iron and top with your favorite toppings. I like to keep it simple with maple syrup, fruit and vegan yogurt. Enjoy! 🙂
- I have made the recipe without the egg replacer and it worked quite well too
