Vegan and Gluten-free waffles

Do you miss waffles since on a gluten-free diet or being vegan? These are the solution

Vegan and gluten-free waffles

Vegan and Gluten-free waffles that don't taste like a pale healthified version, because they aren't. These are the closest to the real thing I've managed to make, and are really easy and fast to whip up.


Ingredients

  • 1/2 cup of almond meal
  • 1/2 cup of tapioca flour
  • 1 tablespoon of coconut flour
  • 1 teaspoon of baking powder (ensure GF)
  • 2 teaspoons of sugar (optional, especially if making a savoury topping)
  • replacer for 1 egg (I use orgran egg replacer 1 teaspoon powder + 2 teaspoons of water)*
  • 2 tablespoons of coconut iol (or other oil if you do not like coconut)
  • 1/2 teaspoon of apple cider vinegar
  • 1/4 teaspoon if vanilla extract
  • 1/2 cup almond milk (or other plant-based milk)
  • a pinch of salt

Directions

  1. In a bowl, mix all the dry ingredients together. Add the egg replacer and the wet ingredients and mix well.
  2. Heat up your waffle iron. When it is hot, grease with coconut oil or another oil. Add 1/2 of the waffle mix and cook until a bit golden and fluffy. Try to not overcook, the exterior should be a bit crispy but the waffle and middle flexible and soft.
  3. Take out of the waffle iron and top with your favorite toppings. I like to keep it simple with maple syrup, fruit and vegan yogurt.
  4. Enjoy! 🙂


  • I have made the recipe without the egg replacer and it worked quite well too
