Vegan French Toast

  • Servings: 2 or 4-5 toasts

A fast, easy and cheap recipe to use almost stale bread.


  • 4 slices of bread*
  • 1/2 cup almond milk
  • 1 teaspoon of flax meal
  • 1 teaspoon of tapioca flour
  • 1 tablespoon of maple syrup (more to serve if wanted)
  • a sprinkle of ground cinnamon – adjust to taste


  1. Put the almond milk, flax meal, tapioca flour, maple syrup and cinnamon in a blender and blend for 30 seconds.
  2. Place your liquid in a shallow dish and soak the bread. Make sure the bread is completely soaked on all sides.
  3. Heat up a bit of oil in a pan, and fry the bread for 2-3 minutes on each side, or until golden brown.
  4. Serve with a dash of maple syrup (optional)

*the taste will heavily depend on your bread. Day old white fluffy bread will work best (but few gluten free breads are 😦 ) The fluffier the bread, the more it will absorb the liquid. I tried with fruit bread as you can see in pictures below but mine was too dense. The bread in photos is a Schar Sourdough bread.
